Grease Management Compliance

Grease Trap Violation

If your Food Service Establishment (FSE) has received a notice of violation (NOV) letter from our department, we ask that you:

  • Please read the letter in its entirety (may be double-sided).
  • For passive interior and exterior grease traps to achieve compliance, FSE’s have two available measures:
    • Submit a completed manifest showing the grease trap was pumped out within ten (10) business days of the pump due date on the letter via email to FOG@cobbcounty.org, OR
    • Pump the grease trap & submit the completed manifest within fourteen (14) business days of the date on the NOV letter via email to FOG@cobbcounty.org. In addition, provide a written explanation for not having the grease trap pumped out on time and a corrective plan to ensure the grease trap is pumped out per the frequency given in your FSE discharge permit.
  • For active interior grease traps to achieve compliance, your FSE must provide a manifest for the grease trap AND the grease waste drum showing it has been pumped out within fourteen (14) business days of the date of the NOV letter via email to FOG@cobbcounty.org.
  • CLEANING LOGS WILL NOT BE ACCEPTED
